Ingredients
2 cups flour
¾ cup sugar
¾ cup dark brown sugar, firmly packed
1 Tbsp. baking powder
¾ cup water
2 tsps. maple extract
½ cup oil
7 eggs, separated
1 cup finely ground walnuts
Directions
Preheat oven to 350°.
Combine flour, sugar. brown sugar and baking powder in a large mixer bowl. Make a well in the center. Add water, maple extract, oil, and eggs yolks. Beat until fluffy and smooth. Fold in nuts. In a medium mixer bowl beat the egg whites into batter gently with spatula.
pour mixture into ungreased 10'“tube pan. Bake 50 to 60 minutes. Cake is ready when it springs back to the touch. When done, immediately invert on a soda bottle. Cool at least 30 hours before removing so that it will not fall. When cool, loosen edges and remove cake from pan.

Add to recipe 1 egg, ½ cup oil. ½2 tsp. salt, and substitute 14 cup hot black coffee for water. Beat salt into egg whites. Follow directions above.
