Maple-Bran Muffins are a wholesome, naturally sweet treat perfect for breakfast or an afternoon snack. The deep flavor of pure maple syrup pairs beautifully with hearty bran, whole-wheat flour, and plump raisins or dates. Finished with a subtle nutty crunch, these muffins offer a satisfying texture and rich, comforting taste.

MAPLE-BRAN MUFFINS

Ingredients

  • 2 eggs

  • 1 cup sour cream, plain yogurt, or buttermilk

  • 1 teaspoon baking soda

  • 1 cup pure maple syrup, sorghum, rice syrup, or sugar

  • 1 cup bran

  • 1 cup whole-wheat flour

  • 1 cup raisins or chopped dates

  • ½ cup chopped nuts or sunflower seeds

Directions

  1. Preheat oven to 350°F.

  2. Grease a muffin pan or line with paper liners.

  3. In a medium mixing bowl, beat eggs until well blended.

  4. Add sour cream (or yogurt or buttermilk), baking soda, maple syrup (or chosen sweetener), bran, whole-wheat flour, raisins or dates, and nuts or sunflower seeds.

  5. Mix just until all ingredients are moistened. Do not overmix.

  6. Fill muffin cups about three-quarters full.

  7. Bake for 15–20 minutes or until a toothpick inserted in the center comes out clean.
