Maple-Bran Muffins are a wholesome, naturally sweet treat perfect for breakfast or an afternoon snack. The deep flavor of pure maple syrup pairs beautifully with hearty bran, whole-wheat flour, and plump raisins or dates. Finished with a subtle nutty crunch, these muffins offer a satisfying texture and rich, comforting taste.

Ingredients
2 eggs
1 cup sour cream, plain yogurt, or buttermilk
1 teaspoon baking soda
1 cup pure maple syrup, sorghum, rice syrup, or sugar
1 cup bran
1 cup whole-wheat flour
1 cup raisins or chopped dates
½ cup chopped nuts or sunflower seeds
Directions
Preheat oven to 350°F.
Grease a muffin pan or line with paper liners.
In a medium mixing bowl, beat eggs until well blended.
Add sour cream (or yogurt or buttermilk), baking soda, maple syrup (or chosen sweetener), bran, whole-wheat flour, raisins or dates, and nuts or sunflower seeds.
Mix just until all ingredients are moistened. Do not overmix.
Fill muffin cups about three-quarters full.
Bake for 15–20 minutes or until a toothpick inserted in the center comes out clean.
